In addition to her work with HSUS, Kristie Middleton is the author of the forthcoming book, MeatLess: Transform the Way You Eat and Live—One Meal at a Time. She has partnered with the nation’s biggest school districts—including Los Angeles, Detroit, and Boston—to implement plant-based initiatives such as Meatless Mondays.

A growing number of people are cutting back on meat—to look and feel better, walk a lighter eco-footprint, or to help animals. If you want to eat less meat and dairy without giving them up entirely, Middleton shares inspirational stories from those who’ve lost weight, reached their health goals, protected animals, and reduced their carbon footprint through plant-based eating.
